This is an arranged somen dish featuring 'Kogen no Ito' (Highland Threads) from Oku-Yoshino. These extra-fine noodles, less than 1mm in diameter, are produced during the cold months from December to March. While incredibly thin and delicate in texture, they are characterized by their remarkable firmness and chewiness (koshi).
